Once in Paris, the coffee is hand roasted, by small quantities: the chief torrefactor determines time and temperature for each coffee. Once roasted, the taste of coffee is evolving: it takes fifteen days to achieve its optimum taste and it stays excellent for three months. Single origin or blend, the coffees are packed on site, with the roasting date written on the packaging.
