Bélissaire Boissier developed the original recipe for glazed chestnuts, that gave birth to the very first marron glacé. In 1827, he established a shop in Paris, and decided to make a special candy, in homage to the city.

The chestnut brown is a chestnut with a round shape, with two lobes and without fold of skin inside the fruit. The best chestnut vintage come from Naples, Turin and the Ardèche department, which boast ideal growing conditions. The initial recipe has been brought into line with current tastes, with less sugar, but has always kept the same spirit: a  vacuum travel box of candied chesnuts has been invented for gourmet travellers.

In the beginning of this 19th century, the cherry trees in Montmorency (*) were all the rage  and Parisians have no hesitation in making the trip to pluck the precious fruits. The round shape and the colour red inspired the confectioner who created the "ball candy" from fruit juice, then adapted the recipe to make rose, violet and poppy candies, which It still is today the original recipe.
