Amador Peset produces olive oil, from green olives harvested from millenial trees planted within the Senia territory in Spain.

To protect millenial olive trees has become a priority: in 2006, the Tree Heritage Protection Act which strictly prohibits the uprooting of trees over 3.5m in circumference has stopped the wave of auctions, whose prices were rocketing. A millenial olive tree could be traded up to 65k€.

The work begins by the tree localization to make an inventory: it seems that they were planted along the axis of the ancient Roman road called Via Augusta, which linked the Pyrénées to Cadix. Once discovered, the olive trees are classified and the owner of the tree signs a contract with Amadeo Peset, who will take care of the tree and harvest olives.

It is necessary to preserve the trees from beeing choked by the weeds and the harvest is made with nets placed beneath the trees.

In 2015, the oil has been listed in the Repsol Guide and has been awarded by the Compromiso price in 2016. The Michelin starred Vicent Guimera will soon propose olive oil&food pairing through his restaurant menu.
